I'm two weeks away from the bff's wedding, and it occured to me that the the Modern Beau and I hadn't bought her and her fiance a gift. This is the gal who isn't the bachelorette/bride type. She (and her to-be-husband) aren't much the domestic type either. I perused her registries the other day and they had all your typical wedding registry fare: china, kitchen gadgets and linens, none of which really seem like a good gift for these two.
I mentioned we needed to get something to the Modern Beau, who like me is a member of the wedding party having been friends with the groom before meeting the bride, and he had sort of the same reaction, but put it more eloquently: "Wow, this is a really high-pressure gift." These are two of our best friends, a place setting of china just doesn't seem significant enough.
So what do we get them? We went to Bed, Bath and Beyond today and mulled these two options, neither of which are on their registry: an ice cream maker and an 80-quart rolling cooler (the, or at least the groom likes to grill). Any other suggestions?

I've also seen a gift card "tree" to all their favorite restaurant/date spots (movie theater too?) which could also be fun and unexpected...
You could go for something artsy. When I nothing on my friend's registry seemed appropriate, I got her these handmade glass wind chimes in her favorite color.
For our wedding, a dear friend gave us this beautiful metal star wall hanging. It has a shadow box in the middle, and she cut up our invitation and made a collage out of it. (I don't know if I am describing it well) It was my favorite wedding gift.
I know you said she's not the domestic type, but since both of the things you're considering are food-related, how about maybe adding this in the mix?
If you go to Tastebook.com, you can design your own (super-classy) 100-page cookbook. It will look like what you get in the store -- hard back, fancy cover art that you can pick, etc. And you can add your own recipes or pick stuff from Epicurious.com. So, like, you could get them an ice cream maker and add a custom-made cookbook of ice cream and summer picnic foods. Or all grill stuff. Or beer-themed foods. Whatver you want. And you can also add your own personal pictures.
I'm planning to make one for my friends as a wedding present this summer and add in some kind of cool kitchen gift.

I got an ice cream maker for Christmas, and it has changed my life. I mean, unhealthy? You bet. But so easy, and if they aren't super domestic folks, it's perfect. You just dump stuff in and hit a switch. I love mine.
I would give them a stat. Go to International Star Registry and name a star after them. Its an incredibly unique gift, they will never forget it and it won't be duplicated. It's easy to take with you if you ever move, requires hardly any packing, they can't fight over it if they ever get divorced, I could go on and on here.....
